Ingredients
- 3 cups of rice
- 20g of vegetable oil
- 1 whole chicken
- 5 spring onions
- 8 fresh plum tomatoes
- 8 medium carrots
- 1 medium cabbage head
- 3 medium size irish potatoes
- 1 red bell pepper
- 1 green bell pepper
- Salt and Seasoning (to taste)
- 1tsp parsley flakes (optional)
- 1tbsp cayenne pepper
- 1 tbsp thyme
Instructions
- Cook your rice and set aside
- Wash and cut chicken/liver into pieces.
- Place in pot; add chopped spring onions, seasonings, and thyme.
- (If using) Add cayenne pepper flakes and parsley.
- Cover contents with water; start cooking.
- Once boiling, add chopped tomatoes and vegetable oil. Cover, cook 15 minutes.
- Add carrots; cook 5 minutes.
- Add potato puree, chopped bell peppers, and cabbage.
- Stir, cover, cook 5 minutes on high heat.
- Add salt to taste.
- Top up water to same level if needed.
- Serve sauce with rice
